Cilantro Lime Tomatillo Dressing

I found a recipe just like this on another blog. I liked her version but it made WAY too much and wasn't as flavorful so I fixed it! This stuff is like liquid crack...just sayin'. Eat it on tacos, salads, dip stuff in it, whatever, but it's so very yummy!

Cilantro Lime Tomatillo Dressing
makes approx. 2 cups
2 tomatillos
1 jalapeno; seeds and all (remove seeds if you want it wimpy, but it's awesome spicy!)
10 sprigs of cilantro
3-4 cloves of garlic
2 green onions
2 1/2 Tbsp. lime juice
2/3 cup mayo (I have tried several different types, but Hellman's makes it taste the best)
2/3 cup sour cream
1 tsp kosher salt


If you buy tomatillos with the husk on them, go ahead and peel them, the cut them in half....


Toss them a blender, then count out 10 sprigs of cilantro....


Go ahead and peel the leaves off the stalk...


Toss them into the blender with the tomatillos. Take the two green onions, cut off the end then cut them in half like so......



Into the blender they go as well. Then take the jalapeno and cut off the end and cut it in half.....



Toss that into the blender (seeds and all for some spice, if not un-seed it first). Take a couple cloves of garlic and cut the stem end off.....



Pop them into the blender. Then you are going to measure out 2 1/2 Tbsp of Lime juice (concentrate is fine).....


Then measure out 1 tsp of salt....



Throw that into the blender too. Next measure out 2/3 cup of mayonnaise.....



Again, into the blender, then measure out 2/3 cup of sour cream.....


Into the blender as well.......


Now you are going to set the lid on top (yes, make sure to put it on otherwise it can explode everywhere!). Place on base and turn it on high!



Blend that goodness up!!!!



And there you have it! Make sure to blend it really well...you want no chunks remaining...



Make sure to put it in a container that seals well. Then refrigerate at least 30 mins before using it....such a pretty color!



It keeps in the fridge for up to 2 weeks before it goes bad. Eat it on EVERYTHING!!!!!
