Growing up, my mom used to make this stuff called S.O.S. or 'Shit on a Shingle' aka Creamed Chipped Beef on Toast. So yummy and a definite comfort food. You can make it for breakfast with eggs (or dinner like I did, also with eggs, because let's face it, breakfast for dinner is WIN!!!)
Creamed Chipped Beef on Toast
makes 4-6 servings
1 can Armour Sliced Beef (you can find it near the tuna in the grocery stores)
A loaf of bread (I saw some yummy 'Everything' bread at Wal-Mart last night, so that's what I used)
3 Tbsp butter
2 Tbsp flour
approx 2-2 1/2 cups milk
black pepper to taste
If you are using regular bread (aka sliced bread) go ahead and toast it. Otherwise if you bought like I did, go ahead and set your oven to 400 degrees.....
Slice up that pretty loaf of bread into 1 inch thick slices....
Line a cookie sheet then place the slices on it.....
Go ahead and pop that in the oven. Cook for 10 mins on each side (my oven is lame so you might have to do less....let's pretend everyone's oven sucks like mine does)....
Now you are going to open up the Armour beef slices....
Put it in a strainer....
Spread it out really well....
And run it under water. There is a ton of salt in this stuff so make sure to rinse it well!!!!
Now you are going to dry it up on some paper towels....
Stack it up in one stack really nicely....
Roll it into a cigar like form....
And slice it into strips. Make sure to hold the strips together....
Now, you are going to cut those strips in half....
You need to get out a large skillet and turn it on med-high heat. Now take the butter and melt it in the pan....
Once that is melted, go ahead and toss in the beef strips....
Cook it for a few minutes. Not browned or anything, just enough to heat. Now you are going to toss in the flour....
You need to cook the flour for about 2 minutes, otherwise you will have a funky taste of uncooked flour...eew....Once that is cooked, you are going to add the milk. I add it 1 cup at a time and just keep going.....
Then I add the pepper......
Go ahead and stir it up really well, making sure to get all of the flour dissolved. Let it come to a slow boil. It will thicken as it gets hot.....
Once it's at the consistency you want it, turn the heat off....and then you are done! Serve it over a couple slices of toast. So GOOD!!!!

Homemade "Chipotle" Burritos
If you are like me, you have mad love for Chipotle. I love eating there, yet can't always afford to, so I made up my own version. Keep in mind, you can sub chicken or pork for the meat I use. Mike (my husband) loves the meat, so that's what I make.
Homemade "Chipotle" Burritos
makes 6 large burritos
6 burrito size flour tortillas
1 lb stew meat
1 can black beans
1 cup fresh salsa or whatever salsa you like
3/4 cup cilantro lime tomatillo dressing
1/2 cup shredded cheddar cheese
1 1/2 cups lime cilantro rice
1 Tbsp cumin
1 Tbsp chipotle chili powder
1 Tbsp ancho chili powder
1/2 Tbsp black pepper
1/2 Tbsp garlic salt
1 Tbsp onion powder
2 tsp dried parsley
1 tsp paprika
1/4 tsp cayenne pepper (optional)
3 Tbsp sour cream
1 tsp olive oil
1 1/2 cup water
First you are going to take the stew meat and cut all the fat off and chop it into tiny little pieces....
Now you are going to put all that meat into a large bowl. Toss the cumin, paprika, pepper, chili peppers, garlic salt, onion powder, cayenne, and parsley in with the meat. Now you are going to add the oil....
Take your clean hands and rub all that goodness all over the meat. It should coat every little piece. This helps seal in the flavors in the meat. When you are done, it should look like this.....
Go ahead and wash your hands off. Now you are going to take a large skillet and turn the heat on high. When the pan is hot, add the meat and slightly brown....
Now you are going get 1 1/2 cups water....
Go ahead and put that in with the meat....
When that starts to boil, get a can of black beans and drain them....
Now you are going to run them under water....
Make sure your water runs clear. Now add them to the pan with the meat....
Give it a good stir and allow that to come back to a boil....
Once it starts boiling, add a lid. Make sure to stir occasionally.....
Let that stuff cook for about 20 mins on high. There should be a little water left but it should be nice and thick with seasonings and stuff....
Go ahead and remove it from the heat at that point. Now you are going to take a large bowl and add the rice, meat mix, sour cream, lime dressing, and salsa.....
Now you are going to mix it up really well then add the cheese....
Now mix all of that mess up. It looks really gross once it's all mixed up, but it tastes amazing. That is my one complaint about Chipotle burritos because everything is all separated....
Go ahead and warm your tortillas up then spoon some mix into it....
Roll into a burrito and there you go....dinner!!!!!
The mixture will stay good for a couple of days in the fridge. I like that it makes a lot so I can have it for lunch the next day!!!

1 3/4 cup water
1 tsp kosher salt
2 tsp lime juice
2 Knorr cilantro cubes or 4 Tbsp fresh cilantro
1 tsp vegetable oil
I have a rice cooker, so I use that to make my rice. If you don't that's ok. Just take the 1 cup uncooked rice and the water and make rice as directed. When rice is cooked, place in bowl.
Then take 2 of the Knorr cilantro cubes and unwrap them....
Go ahead and crush them between your fingers and sprinkle over the rice....
Now you are going to take the salt and add it to the rice....
Now you are going to measure out your lime juice and add it....
Then add the oil....
Go ahead and mix it up...this is what you get......
Add it in recipes, eat it straight. It's delicious with tacos, fajitas, etc......

I love some salsa! This recipe is super easy and yummy. Definitely not the most awesome salsa I make, but this goes in a pinch.
Fresh Salsa
makes about 2 cups
5 roma tomatoes
10 sprigs cilantro
1/2 white/yellow onion
1 clove garlic
1 jalapeno
1 tsp kosher salt
juice of 1 lemon
1 tsp lime juice
First you are going to cut 3 tomatoes into quarters then in half like so......
Then you are going to pop them into a blender and just pulse a few times.....
Then you are going to take the 2 other tomatoes and dice them up.....
Throw all of that into a bowl. Then you are going to dice 1/2 of an onion.....
Throw that into the bowl with the tomatoes. Then you are going to take the jalapeno and cut the top off, then cut it in half. Remove the seeds. I take a spoon and scoop them out....
Go ahead and dice the jalapeno into small pieces....
Pop that into the bowl with the tomatoes and onions. Now you are going to mince 1 clove of garlic.....
Into the bowl with that. Now you are going to take the leaves off of the 10 sprigs of cilantro. Mince that up really fine.....
Place that into the bowl too. Now you are going to juice 1 lemon right into the mix....
Add 1 tsp of kosher salt.....
Now you are going to add 1 tsp of lime juice.....
Go ahead and mix all that yummy-ness up....eat in stuff or however you want. You might want to chill it for about a half hour before hand to allow the flavors to get it on......
There ya go!
